Reverse-flow, done right

TS70P reverse-flow smoker

Smoke and heat travel the length of the tank underneath a steel baffle before rising back over the meat, which is what "reverse-flow" means on a Meadow Creek tank smoker. That path evens out the temperature between the firebox end and the far end of the cooking chamber, so the ribs by the door and the ribs at the back finish closer to the same time. The TS70P's firebox is built from 1/4 inch steel plate and its tank from 3/16 inch steel plate, heavy enough to hold heat through a multi-hour cook without the metal flexing or warping.

The TS70P holds up to eight pork butts or six whole briskets across its two slide-out grates, which is enough for a competition team or a backyard cook feeding a full block party. If you like water smoking, the TS70P's water reservoir holds water or apple juice underneath the meat and drains through a bottom spout when the cook finishes. Meadow Creek smokers are welded by hand in Lancaster County, Pennsylvania, the same shop that builds every tank smoker and pig roaster we carry.
