The reverse-flow layout is the whole reason people ask for these units by name instead of just "a smoker." Heat is produced in the firebox at the side, flows beneath the sealed drip pan to the opposite end, enters the smoking chamber, then returns toward the firebox and exits the stack. That round trip evens out the temperature along the full length of the tank, so a brisket at the far end cooks at roughly the same rate as one sitting near the firebox instead of drying out faster.
Size is where the five models split apart. The smallest units in the line start around 70 gallons and are sized for a backyard cook or a small competition team, while the larger models move onto a highway trailer built for a catering route.
